Sea Bream Sweet and Sour

SELONDA Sea Bream ("Orata" / "Dorade Royale") with Sweet and Sour Sauce

Sea Bream - Ingredients for 4 people:

  • 4 SELONDA Sea Bream 300-600g

  • 2 green peppers

  • 2 red peppers

  • 1 onion

  • 4 cloves of garlic

  • 1 can of pineapple cubes

  • 1 small wine glass of olive oil

  • salt, pepper

Sea Bream - Execution:

  1. Rinse the (de-scaled, gilled and gutted) Sea Bream. Pour salt on the outside and inside of the fish and place them in an oiled baking pan.

  2. Clean and cut the green and red peppers into strips. Dice the onion and the garlic. Pour salt on all of the ingredients.

  3. Pour the olive oil into a frying pan and saute the peppers, onion and garlic.

  4. Place the sauteed onions, peppers and garlic around the Sea Bream in the baking pan.

  5. Pour the pineapple cubes around the Sea Bream and save the juice for the Sweet and Sour sauce.

  6. Bake for approximately 30 minutes at 180 degrees Celsius in a pre-heated oven.

     

Sweet and Sour Sauce - Ingredients:

  • 1 spoon of white wine vinegar

  • 1 spoon of ketchup

  • 1 spoon of soy sauce

  • pineapple juice (from the can)

  • 1 spoon of honey

  • 1 spoon of corn flour

  • 4 spoons of water

Sweet and Sour Sauce - Execution:

  1. Add the vinegar, ketchup, soy sauce, pineapple juice and honey to a small pot.

  2. Warm up the ingredients in the pot until it boils.

  3. Mix the corn flour with the water in a bowl.

  4. Pour the corn flour-water mix slowly to the boiling small pot.

  5. Stir until a consistent sauce is reached.

  6. Pour the sauce into the baking pan with the Sea Bream.

  7. Serve immediately.
